Based on un analysis of changes in the food bill of Spanish households over the last forty years, this article analyzes the links between social, economic, technological, demographic, and ideological changes together with changes that have occurred in the field of health and the aesthetics of the body, on the one hand, and changes in eating behaviour, on the other. These changes have resulted in the introduction of modem food habits, characterized by a complex, dynamic interaction between the reappraisal of culinary traditions and the increasing use of convenience foods.Downloads
