Análisis de la gastronomía local a través de las fuentes de información, imagen y satisfacción

El propósito de este estudio es examinar el efecto que la satisfacción de los visitantes con los restaurantes tradicionales ejerce sobre la gastronomía local, la imagen general de una ciudad y la lealtad a dicho destino. El trabajo de campo se realiza en la ciudad de Córdoba (España), a través de un cuestionario para conocer las opiniones de los comensales en reconocidos restaurantes que basan su cocina en platos tradicionales elaborados con alimentos autóctonos de calidad. Los datos alcanzados confirman que una experiencia satisfactoria con la comida de un restaurante tradicional tiene un efecto positivo en la imagen del destino y la gastronomía del sitio, así como en las intenciones de recomendar y repetir la visita a dicho destino. La metodología utilizada se basa en un estudio descriptivo, donde no existen trabajos previos que agrupen con respecto a la satisfacción del restaurante tradicional, la comida, el servicio y el ambiente, siendo esto una novedad. El trabajo aporta implicaciones teóricas y prácticas para que los gestores turísticos puedan utilizar nuevas estrategias para fidelizar al turista que visita una ciudad desde la perspectiva gastronómica.
