Abstract
A new nutritional model appeared on Western Mediterranean European countries at the end of the Middle Ages. Mestre Robert de Nola collected in his cookery book the influence of Catalan cuisine. Each social group adapted the model to their means. Saint Anne's Collegiate canon nutritional habits were the example of wealthy people ideal diet.
