Turismo gastronòmico: Un análisis sistémico

El turisme gastronòmic s’ha convertit en un tema d’estudi important en la investigació turística. Aquesta investigació examina l’evolució de la recerca del turisme gastronòmic entre el 1979 i 2022, en l’àrea temàtica de les ciències socials. Amb aquesta finalitat es desenvolupa una revisió sistèmica que inclou, l’anàlisi bibliomètrica de publicacions indexades i l’aproximació conceptual, identificant els principals temes de recerca, perspectives i enfocaments disciplinaris. L’estudi bibliomètric va identificar 681 publicacions com articles de recerca sobre turisme gastronòmic. Els resultats de la investigació revelen que aquest tema de recerca augmenta després de l’any 2013 amb una perspectiva des del màrqueting i la gestió. Pel que fa als conceptes relacionats, els resultats mostren que el més utilitzat és el "turisme d’aliments" però n'hi ha d'altres utilitzats indistintament com el turisme culinari o el turisme gastronòmic. L’estudi mostra que la majoria de les definicions influents del turisme gastronòmic són relativament antigues i que no s’han produït de noves. Les principals línies d’investigació són la relació entre turisme gastronòmic i cultura, la gastronomia com a recurs turístic, la gastronomia com a eina de promoció i el perfil del turista gastronòmic.
